Do both work offline?
Yes, with local models. Msty's paid licence is checked online, with 14 days allowed offline according to its changelog. Twoody has no licence to check, and works offline once its model is installed.
Which one reads scanned documents?
Twoody: it reads scanned PDFs with the Mac's text recognition, on the Mac. Msty's documentation of Knowledge Stacks mentions no text recognition.
